Jam Sandwich Cake

You can't go wrong with a classic Victoria Sandwich cake and when i spotted a loaf novelty cake tin, i thought it was a fab idea for presenting the cake with a twist.

Silicone Loaf cake tin

I made my usual sponge recipe and placed all the mixture into the silicone cake case. As the case was fairly deep, i adjusted the cooking time from 20 to 35mins.

Once the cake had thoroughly cooled, i removed from the case and sliced the cake in half. I then spread jam on one half of the 'bread', creating my jam on toast cake

I then spread jam on the other half of the cake and sandwiched together to create the jam sandwich effect.

I am going to use this basis to create a cheese sandwich cake, using a thin layer of sugarpaste and buttercream to hold the sandwich together.
