Picnic Treats

I love picnics and i am always on the look out for new ideas to pop in our picnic basket so when Unilever got in touch asking if i would like to take part in their picnic challenge i was keen to sign up.

As part of the challenge i was sent a lovely picnic hamper with goodies to use in my challenge so keen to steer away from sandwiches i came up with these little dishes:

Tortilla Chips:

Crisps and dips are one of my favourite snacking foods, and this is a slight twist on the packets of tortilla crisps.

I simply cut up Tortilla wraps into triangles and placed in the deep fryer for a few minutes until they were crispy and golden in colour.Once cool they are perfect for dipping into a range of sauces.

Tortilla Chips

Chicken and Mango Pasta Salad:

1 cooked Chicken breast
1 red pepper
1 tomato
50g pasta shapes.
2 tablespoons of Colemans sweet chilli and mango sauce

Boil pasta and leave to cool
Diced chicken breast, tomato and pepper and add the mango and chilli sauce and mix.
Mix the pasta with chicken and mango sauce.

The chicken and mango sauce mix is also ideal for filling a tortilla wrap

Chocolate Scones:

Scones are a lovely picnic treat so  i decided to mix it up a little and try my hand at making some chocolate versions.

4oz Self Raising flour
1oz Cocoa Powder
1oz Flora Buttery
1oz Caster Sugar
2 fl oz milk

Mix the flour and cocoa and rub in the butter
Add the sugar and milk and mix to a dough
Roll the dough out and using cutters cut dough into rounds
Place on a greased baking tray and cook on 190 for 20mins

To served i added some whipped cream.

Plenty Kitchen towels review

Its fair to say that with two little men in the house that i need a constant supply of cleaning equipment from muddy shoes to spilt drinks kitchen towels seem to be the cloth of choice in this household

When Plenty got in touch about there super strong kitchen towels i was keen to give them a try. So we set down a test and put the super strong towel through its paces.

Straight away i noticed that the Plenty kitchen towels did feel really strong and of course me being me i had to try the super strong pulling test, and i could not get it to rip no matter how hard i tried.

Eager to see what it could do around the kitchen i set about using the Plenty towels to wipe down the kitchen surfaces, it was just like using a regular cloth. Little man was also keen to get involved and used them to clean out the messy play tray.

I was surprised at how strong the Plenty Super strong towels were, we were able to use the towels as cloths which was great as we could just throw away after each use. We found its true one sheet really does do Plenty.

Disclaimer: We sent some Plenty Kitchen towels and a goody bag for the purpose of this review but all are opinions are our own.

Quick and Easy Tuna and Pasta bake

Tuna and Pasta bake is one of my kitchen cupboard meal's it is quick and easy to make and both the boys will tuck into it too. Another reason i love this meal is that i always have the basic ingredients for this in the cupboard.

When Sainsbury's got in touch about their Signature dish challenge using cupboards stable products, i thought this receipe would be ideal.

Tuna and pasta bake:

1/2 jar Bolognese sauce
1 tin tuna chunks
1 tin sweetcorn
Coloured peppers
100g Pasta shapes (i think i used Thomas the Tank pasta this time)
Handful of fresh Basil
Mild  grated cheddar cheese
Handful of crushed crisp

Boil the pasta until almost cooked, then drain and add the chopped tomatoes, tuna, sweetcorn, diced peppers and basil. Mix thoroughly until the pasta is covered and place into an ovenproof dish. Add melted cheese on top and sprinkle over the crisp (This makes a yummy crunchy topping). Then place in the oven for 20mins at 175.

Grated cheese and crisp topping

Just out of the oven
This is enough to feed my two hungry little boys. When i make this for the family i jsut double the quanties.

My Tuna and Pasta bake is an entry in to the Sainsbury's kitchen hero Challenge

Disclaimer: I was sent a Sainsbury's voucher to participate in the challenge.
